Today, we are giving fashion a break and talking about something else I love! Food! I love eating, cooking…if there’s food involved, you can count me in!

So, tonight I wanted to make something nice for myself. I’ve been eating lazy food for a minute so I figured why not?

For dinner I had Garlic Butter Shrimp in simple coconut curry sauce served with boiled potatoes! It’s quick & easy and I hope you try it at home if you have all the ingredients!

Without wasting much time, let’s get into it!

You’ll need:

  • 20 small Shrimps ( Peeled & deveined)
  • 3 tbsp Butter
  • 7 Garlic Cloves (chopped)
  • Coconut milk (half can)
  • 1 small onion
  • 1 medium tomato
  • 2 chilli peppers
  • 1 scotch bonnet
  • Green peas
  • 5 medium Russet or Yukon Gold Potatoes (Irish Potatoes)
  • Salt, Bouillon cube/powder, Thyme, Cajun (to taste)

Now that we have all our supplies, it’s time to cook:

  • Boil potatoes (seasoned with salt, thyme & cajun) until soft
  • Set aside to cool
  • In a frying pan, heat 1.5 tbsp of butter with chopped garlic until fragrant
  • Add shrimps and cook for about 2 minutes stirring consistently
  • Set aside to cool
  • In the same pan, add 1 tbsp butter, onions and cook until fragrant
  • Add peppers, tomatoes, peas & coconut milk
  • Season with bouillon & thyme
  • Cook until coconut milk is reduced to cream consistency
  • Add garlic butter shrimps
  • Simmer for 1 minute.
  • Serve
